Sweet and Savory Crepes

Description

Crepes, the French word for "pancake," are light, paper-thin egg batter creations. They can be served  plain, as a savory main course or a sweet dessert dish.  In this class, you will prepare and feast on savory crepes filled with various meats, cheese or vegetables and at the end of class enjoy a variety of dessert crepes.

Objectives

Ths students will learn to prepare the crepe batter and then using a saute pan, will practice  the technique for making light and paper-thin crepes.

1. Preparing the crepe batter

2. Resting the crepe batter

3. Demonstration and hands-on preparation of crepes

4. Crepe fillings

5. Accompanying  sauces

6. To  flambé or not to flambé

7. Storing unused crepes
